Those who know me know that I’m a sucker for a great cup of coffee. I drink a cup of coffee nearly every morning. However, with the warmer months here in Southern California that cup of hot coffee just doesn’t have quite the same appeal as it does during the cooler months. I’ve found the best remedy for the scorching heat is a tall glass of something ice-cold. Why not iced coffee?
I searched the Internet for a recipe and found that most involve brewing coffee first. Don’t get me wrong, I love the taste of brewed coffee, but I wanted something using instant coffee so I could prepare it by the glass. I found a good base recipe online and tweaked it until I was happy with the taste. I like my iced coffee strong and sweet.
Here’s what I used:
- 1 tablespoon instant coffee
- 1 tablespoon sugar
- 1/4 cup hot water
- 1/4 cup vanilla creamer
- 1 cup cold water
Here’s what I did:
Mix coffee and sugar with the hot water. Stir until sugar and coffee are both dissolved. Add ice to a tall cup then add the cold water and creamer. Slowly pour the coffee mixture into the cup and stir slowly until ingredients are well mixed. I like to pour into a glass, but that’s optional. Enjoy your easy iced coffee!
Note: Do not add coffee mixture directly over ice. I found that it causes coffee to taste bitter.
